What a difference a little heat can make. Typically, the Czech Republic's classic Pilsner boasts a sharp and bright nose of Zatec (Saaz) hops, followed by a rich malt body and remarkably bittersweet finish. Or at least that's the optimum, right at the brewery, straight from the source. But in order for it to keep in kegs and bottles during shipping and storage, beer is usually pasteurized, heated to 60° Celsius (140° Fahrenheit) or higher for about 30 minutes. The result is a more stable brew, but one which has lost much of its rich aroma and taste.

Good news for shippers. Bad for beer lovers.

Enter the tankovna, or tank pub, in which unpasteurized, unfiltered beer is drawn from large tanks and served with more of its characteristic flavors intact. As the originators of the Pilsner style, the twinned brewers Pilsner Urquell and Gambrinus are quite naturally the leaders in tank pubs, with over 70 in Prague alone. Central Bohemia's Krusovice brewery is also now starting to offer tank beer, most notably at the new pub Beograd.

Located near New Town hall, Beograd's site has seemingly been boarded up or under construction for most of the past few years. The results were worth the wait -- it's a pleasant set of wood-appointed, tile-floored rooms, with the gleaming copper tanks positioned along one of the larger rooms' main walls. Downstairs, a big beer hall is primed for tour groups from abroad. It may be all new, but in a couple of months it'll look like it's been here forever.
